There is only one authentic Espresso
Espresso should have a beautiful layer of crema on the surface, several millimetres thick. Its colour should be hazelnut to chocolate brown, with reddish or tiger-like highlights. The colour of the crema tells us how the coffee was roasted and what happened during extraction.
The crema should be smooth, without large bubbles, and should return to its original appearance after being stirred with a spoon. Another important aspect is the aroma. When smelling an espresso, we first assess the intensity of the aroma and the intensity of the roast, followed by other individual aromas. A well-prepared espresso should have notes of chocolate, fruit and flowers, depending on the variety.
